Title: Sweet Potato Mochi "Okinawan Recipes"

1lbMochiko
1tsBaking soda
1/8tsSalt
1 1/4cBrown sugar
1cn(13 1/2 oz) coconut milk
1 1/4cWater
2cCooked and diced sweet
  Potatoes
1tbBlack sesame seed
  Kinako (yellow soy bean
  Powder)

Preheat oven to 350 F. Grease a 13 x 9 x 2-in baking pan. Sift mochiko, baking soda, and salt; add brown sugar and mix well. Add coconut milk and water; mix well. Fold in sweet potatoes; pour into prepared pan. Sprinkle with sesame seed. Bake 1 hr. Cool, cut into 2 x 1-in pieces. Coat each piece with kinako. Makes 54 pieces.
